2009 TOLOSA WINERY – PINOT NOIR “EDNA RANCH” – SANTA YNEZ, CA
With Thanksgiving just around the corner, we bring you a great wine to pair with the traditional Turkey or Ham dinner. But not just any wine, this wine is made by Tolosa winery, whose vineyards are sustainably farmed. From a winery that runs on solar power to grapes that are minimally handled, they are SIP (sustainable in practice) certified since 2009. They are located between Santa Barbara and Paso Robles, in the coastal hills of San Luis Obispo. The winery’s goal is to make balanced wines that are true to varietal character and expressive of the cooling ocean breezes and long growing season that define their estate vineyards. This makes fantastic for a Pinot Noir. This winery is committed to making wine utilizing the most environmentally sustainable practices. The wine is made with 100% Organically farmed Pinot Noir grapes (Pommard clones) and aged for 11 months in French oak. It has intense aromas of blackberries, cola with a bit of herbal under notes. The palate is soft and full. If anything it delivers more than the nose promises. In spite of its plushness, there is a tension between the tannin and acidity that promises happy marriages with cuisine, in this case, we recommend you open this bottle about one hour before serving it with the roasted Thanksgiving Turkey. 2010 TENUTA ROVEGLIA – LUGANA (DOC) “WIGHEL” – LUGANA (VERONA), ITALY
Tenuta Roveglia was founded in the 1930s and was recently completely restructured. While the vineyards have been around a while, the winery prides itself in producing wines in small quantity. The production is limited and selective; quantity is always sacrificed in order to produce quality. After the initial gathering, the grapes, chosen from among the most ripe, undergo a delicate pressing. Great care is taken to allow slow maturation of the wine in order to optimize production and conservation of perfumes and flavors. Soil and climate combined with the competence and care of enologist Cesare Ferrari and director Paolo Fabiani have made the Lugana of the Tenuta Roveglia famous for the quality of their wines, today many of their wines, specially this wine is served in prestigious Italian restaurants. The wine we present to you today is made with 100% "Trebbiano di Lugana" grapes, which is also bottled as “Soave” in the Veneto region. First, grapes are roughly selected. Unsuitable grapes are eliminated, and then the real harvest is carried out by hand in small plastic boxes. Soft pressing with 60% maximum extraction of must. Vinification with fermentation in steel barrels after which the wine rests in barrels with its own sediments. It is then bottled aged for 3 months before making available to consumers. We chose this wine as your Turkey White Wine because of its richness. When we sampled this wine, we loved the aromas of apple pie, cloves, and even cinnamon. It reminded us of the holidays. The acid in the mid palate will delight you, and remind you of Granny Smith apples. Delightful finish that we are sure will please your holiday guests. This wine retails for $18.99.

2007 SUNSTONE WINERY –SYRAH - CENTRAL COAST, CALIFORNIA
Sunstone, a boutique winery named after the vineyard estate’s exposed sun-dappled shale and stones, is the premiere destination winery on the central coast. Located just 30-minutes north of Santa Barbara. Sunstone is organic in the bio-sustainable manner and meets all California Certified Organic Farmer standards. Sunstone’s winemaker, Nick de Luca, is dedicated to producing world-class Bordeaux and Rhone style wines, utilizing organically grown wine grapes from the estate vineyards, and grapes from other certified organic vineyards. Sunstone is renowned for its Rhone varietals, and this month’s secondary red wine is one of them. A 100% organically farmed Syrah made in southern Rhone style, displaying soft, sumptuous dark fruits and earthy tones, enhanced by sweet vanilla oak. Barrel aged for over 3 years in French oak, with only 250 cases produced. This wine will also pair with ham and the traditional turkey. The retail price of this wine is $13.99.

2010 CRISTOM – PINOT GRIS – WILLAMETTE VALLEY, OREGON
The heritage of excellence synonymous with Cristom Vineyards stems from the shared vision of Paul Gerrie, Steve Doerner, and Mark Feltz. Since 1992, the thoughtful team has inspired a skilled workforce in a style of winemaking that is both visionary and old-fashioned. Cristom has built its reputation on antique techniques once rare in Oregon. Using native yeasts found on grapes at the time of harvest and fermenting with whole clusters have become the distinguishing methods on which the three partners have built their business and consistent reputation. This month, as our secondary white, we introduce you to their Pinot Gris, otherwise known as Pinot Grigio in Italy. The Cristom Pinot Gris is fermented in stainless steel tanks and does not spend any time in oak barrels. It has a certain creaminess that comes from the several months that the wine spends on its lees. The wine has bright citrus-blossom aromas that range from tangerine zest to lime blossom. Apple, pear, and melon are the fruit flavors that are often noted on the palate. This is a bright and lively wine that offers a broad flavor profile. It has a very natural affinity with food. The previous vintage received 90 points from Robert Parker; this vintage has not yet been rated. We suggest you serve this chilled with light appetizers but it will be especially good with the turkey’s stuffing. The retail price for this wine is $16.99.
